Whichever TV mom, or woman, for that matter, that you might identify with eating healthy is probably on your list of things you want to do for yourself and possibly for your family. Or if you are like me, it’s more important to do it for your family and yet you don’t do it for yourself.
Regardless, without a Sookie, or the perfect kids, or an architect’s salary to draw from chances are meal planning and eating healthy are not always making the top priorities, even though you want them too.
I know for us it’s a constant challenge and I’m blessed in that my husband loves to cook. But I still find that I get super bored with the same foods, that meal planning is still the biggest drain, and we are always, always, always looking at our grocery bills and trying to cut down.
With that in mind here are some of most favorites that have helped us with eating better, not perfect, but better.
First off, I highly recommend a slow cooker. We use it at least once a week, although more likely twice a week. I’m freaking obsessed with my husband’s BBQ chicken. And it’s so easy.
The key is the BBQ sauce. Make sure you get a strong one you love. We use Arthur Bryant’s BBQ Sauce. 1 cup of the BBQ sauce, 1 tbsp. of Worcestershire and a whole chicken, or 3 lbs. of pork shoulder or any other meet you choose. You will not be sorry. Pull the chicken (or meat) and make sandwiches, add to a salad, eat as is.
I also love the blog http://anastasiasfixnation.blogspot.com/ She has some absolute killer recipes. My favorite of hers so far has been the French Dip.
Other favorite uses for our crock pot have been Chili and making stock over night. In our effort to save money we buy whole cuts and the pieces we don’t use (for example a chicken carcass) we throw in the crock pot with an onion a few carrots and celery fill with water and let cook over night.
Chili recipe is taken and slightly altered from the Hungry Girl. Ground turkey and onions sautéed until the turkey is browned. Throw in the crock pot with 2 cans of diced tomatoes, one can of diced tomatoes with Italian seasons, 1 packet of ranch powder dressing, 1 taco seasonings mix, and 2 cans of beans, an 1 can of corn. Voila. Super healthy and so yummy. Freeze for later, use for lunches, it’s cheap and it has huge flavors without being unhealthy.
We also have been doing some great, healthy non crock pot things. I so did not jump on the Kale bandwagon. I find it too tough to eat, and I don’t think it tastes good. HOWEVER I have found the trick to Kale if you must eat it. The trick is to massage it. Yes you heard me, massage it. Take your dressing and rub it into the leaves. This helps to soften them. Also add some sweetness with it. I love adding raisons to Kale when I have it.
I’m obsessed with my carrot soup, and so freaking easy. I cooked baby carrots in chicken broth until the broth is boiled down. I made sure to add some salt while cooking the carrots. When the broth is boiled down make sure the carrots are baby food mushy. If they aren’t add in more broth and boil down again. Throw in a blender with some water and some celery leaves and blend. That easy and super healthy.
When I ‘m looking for fish I am currently obsessed with my teriyaki salmon. Mostly because it’s so easy. Ready…Line a pan super heavily with tin foil so you have no clean up. Spray the bottom of the pan with cooking spray. Take a whole cut of salmon and pour a bottle of teriyaki sauce over it. Make sure the salmon is covered in sauce. Bake at 425 for about 15 minutes. Basically until you are just starting to see some white creeping out from the salmon. And you are done. Eat and enjoy. I like this because it’s so fast and so easy, and because it’s fast and easy I actually do it. That is the problem with a lot of fast and easy recipes they are usually not as easy or as fast as they claim, but this doesn’t get any simpler.
Looking for something sweet I have heavenly chocolate pudding for you. It’s perfect to quell your sweet tooth, while also great for the kids and not feeling guilty. It sounds a little off at first, but it is amazing. Blend 1 cup of almond milk, 2 avocados, ½ cup of cocoa powder, ½ cup of maple syrup, 2 teaspoons of vanilla and voila a fantastic dessert.
So those have been our staples lately. It’s added punch to the days when meal planning is boring, and has given us a little bit of some healthy choices, and in general they are just yummy. I hope you enjoy them as much as we do.
